WINEMAKING
The grapes are exclusively harvested by hand.
Pressing is done in whole bunches on pneumatic presses
in order to avoid any manipulation. A separation of the juices is carried out in order to
to optimize the quality of our wines. After static settling, the wines
ferment under temperature control, and are then aged on lees
fine for 3 to 6 months.

DEALCOHOLISATION
100% physical process and 0% chemical interaction: cold distillation
under vacuum (33 bars of negative pressure). Evaporation of alcohol at 28-
30°C for maximum preservation of the aromatic scents of the wine.
Taste balancing by adding rectified concentrated must.
